Apricot Curry Chicken for 2 People

Ingredients

● 3 canned apricot halves
● 3 tbsp La Siberia honey
● 60ml heavy cream
● 60ml coconut milk
● 1 tsp curry powder
● 1 tsp lemon juice
● Pinch of salt and pepper
● 2 chicken fillets

Preparation

1. Slice chicken, season, and sauté for 10 minutes over medium heat.
2. Blend apricots, cream, coconut milk, lemon juice, honey, and curry powder.
3. Pour sauce over chicken, cook for 5 minutes on low heat,
4. and serve with basmati rice or sautéed vegetables.
