Tomato Ragout with Rum for Poultry or Red Meat

Ingredients

● 400g canned Italian tomatoes
● 50g La Siberia honey
● 2 tbsp rum
● 4 garlic cloves
● 2 tsp liquid smoke
● 1 tsp apple cider vinegar
● 2 tablespoons olive oil
- 1/2 taza de agua
● 1/2 cup water
● Salt and pepper
- Chicken

Preparation

1. Sauté onion and garlic in olive oil until golden.
2. Add tomatoes, honey, water, and cook covered for 20 minutes. Blend and return to the pan.
3. Season the chicken fillets with salt and pepper and sear them in another pan on both sides.
4. Add rum, liquid smoke, and vinegar. Simmer for 15 minutes.
5. Serve over chicken or red meat with sides of your choice.
