Cold Fig Soup with Mint and Lime

Ingredients

● 10 ripe figs
● 2 ripe bananas
● 130g of La Siberia liquid panela honey
● 1 vanilla bean
● Zest and juice of 4 limes
● 1/2 handful of fresh mint
● 1/2 handful of fresh basil
● Forest fruits (strawberries, blackberries, raspberries, currants...)

Preparation

1. Wash and remove the leaves from the mint and basil, then cut them into thin strips.
2. Peel the bananas, cut them into cubes, and place them in a bowl with the lime zest, lime juice, and mint and basil strips. Refrigerate.
3. Separately, bring 1 liter of water to a boil with the honey, the split vanilla bean, and the mint stems.
4. Once boiling, remove from heat, cover, let it cool, and refrigerate.
Serving:
● Mix the cold mint soup with the banana-lime mixture and the peeled and thinly sliced figs.
● This dish should be served very cold and prepared well in advance.
